They are playing Thursday, Friday and Sunday. How often do they not play a game on Saturday in a three-game series.?

nope. Playing 19-21. They do this to get an extra day of rest before Big 12 tourney that starts on Wed
Edit: article is wrong @OP 9000. It says "and Sunday's finale set for 3 p.m."

Oklahoma State concludes the regular season with a league series against Kansas beginning Thursday at Allie P. Reynolds Stadium. The Cowboys are 32-18 overall and second in the Big 12 Conference standings with a 13-8 mark. Thursday's series opener is scheduled for a 6:30 p.m. start, with Friday's game at 6 p.m. and Sunday's finale set for 3 p.m.

The way the team has been playing lately, I think it is a blessing that they get another day of rest. Regardless of what happens the rest of the way, I would like to see a new hitting coach next season. I feel sorry for the pitching staff this season who performed so well for the most part without having the bats to back them up.
